Scottish Shortbread
Ingredients

50 g/2 oz/1/2 cup rice flour
5 ml/1
tsp baking powder
Method:

Cream the butter and
sugar together until light and fluffy.

Sift the
flour, rice flour and baking powder together and
knead into the mixture to form a smooth dough.

Divide the mixture in half. Mark a 20 cm/8 in
round on 2 sheets of baking parchment placed on
baking sheets.

Flatten the dough into the rounds.
Pinch the edges between finger and thumb and prick
all over with a fork.

Bake at 160°C/325°F/gas mark 3
for about 40 minutes until a pale golden brown.

Leave to cool for 10 minutes, then mark into eighths
with the back of a knife and leave to cool
completely. Store in an airtight tin.
