Breads, Biscuits and Cakes Recipes - Spiced Rice and Muesli Cookies

Ingredients

  • 75 g/3 oz/3/4 cup cooked brown rice

  • 50 g/2 oz/1/2 cup muesli

  • 75 g/3 oz/3/4 cup whole meal flour

  • 2.5 ml/1/2 tsp salt

  • 2.5 m/1/2 tsp bicarbonate of soda (baking soda)

  • 5 ml/1 tsp mixed (apple pie) spice

  • 50 g/2 oz/1/6 cup clear honey

  • 75 g/3 oz/1/3 cup butter or margarine


Method:

  1. Mix together the rice, muesli, flour, salt, bicarbonate of soda and spice. Cream the butter and honey until soft.

  2. Beat into the rice mixture. Shape the mixture into walnut-sized balls and place well apart on greased baking sheets.

  3. Flatten slightly then bake at 190°C/375°F/gas mark 5 for 15 minutes or until golden brown.

  4. Leave to cool for 10 minutes then transfer to a wire rack to cook completely. Store in an airtight tin.
