Cheese, Egg, and Cream Based Recipes - Continental Welsh Rarebit

Ingredients                          

  • 225 g/8 oz/2 cups short-cut macaroni

  • 350 g/12 oz Cheddar cheese, grated

  • 10 ml/2 tsp made mustard

  • 60 ml/4 tbsp light ale

  • A little milk

  • 15 g/1 tbsp butter

  • 50 g/2 oz/1 cup fresh breadcrumbs

  • A few snipped chives


Method:

  1. Cook the macaroni according to the packet directions. Drain.

  2. Meanwhile, put the cheese, mustard and beer in a saucepan and heat through, stirring until the cheese has melted and the mixture is well blended.

  3. Add a little milk if the mixture seems too sticky. Add the macaroni and mix well.

  4. Melt the butter and fry (sauté) the breadcrumbs until golden.

  5. Spoon the pasta on to warm plates and top with the breadcrumbs and a few snipped chives.
