Cheese, Egg, and Cream Based Recipes - Crispy Buttered Noodles

Ingredients             

  • 225 g/8 oz any ribbon noodles

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 50 g/2 oz/1 cup fresh breadcrumbs

  • 30 ml/2 tbsp chopped parsley

  • 50 g/2 oz/1/2 cup thinly shaved fresh Parmesan


Method:

  1. Cook the pasta according to the packet directions. Drain, rinse with boiling water, drain again and return to the pan.

  2. Meanwhile, melt the butter and fry (sauté) the breadcrumbs until crisp and golden.

  3. Add to the noodles with the parsley and toss well. Serve straight away, topped with the Parmesan shavings.
