Dolcelatte Dream
Ingredients

2 celery sticks,
finely chopped
-
25 g/1 oz/2 tbsp
butter
-
100 g/4 oz Dolcelatte,
diced
-
50 g/2 oz/1/4 cup medium-fat soft cheese
-
90 ml/6 tbsp single
(light) cream
-
Freshly ground black pepper
-
15 ml/1 tbsp
chopped parsley
-
350 g/12 oz tagliatelle
Method:

Put the celery and butter in a double saucepan or in
a bowl over a pan of gently simmering water.

Cover
and cook gently for about 8 minutes or until
softened. Add the cheeses and cook, stirring until
smooth and melted.

Stir in the cream. Add plenty of
pepper and stir well. Stir in the parsley.

Meanwhile, cook the tagliatelle according to the
packet directions. Drain. Add to the sauce, toss
well and serve straight away.
