Cheese, Egg, and Cream Based Recipes - Dutch Rice Layer

Ingredients

  • 100 g/4 oz/1/2 cup long-grain rice

  • 25 g/1 oz/2 tbsp butter

  • 2 onions, finely chopped

  • 225 g/8 oz Gouda cheese, grated

  • 4 tomatoes, sliced

  • 30 ml/2 tbsp crushed cornflakes


Method:

  1. Cook the rice in plenty of boiling salted water until just tender. Drain, rinse with boiling water and drain again.

  2. Meanwhile, melt half the butter in a frying pan (skillet) and fry (sauté) the onions for 3 minutes until lightly golden.

  3. Use the remaining butter to grease an ovenproof serving dish. Add the rice, then top with half the cheese.

  4. Add a layer of onion, then tomato, then top with the remaining cheese. Sprinkle the cornflakes on top.

  5. Bake in the oven at 190°C/375°F/gas mark 5 for 30 minutes or until golden and bubbling.
