Cheese, Egg, and Cream Based Recipes - Eastern Rice with Egg

Ingredients

  • 450 g/1lb/2 cups basmati rice

  • 750 ml/3 cups water

  • Salt

  • 60 ml/4 tbsp sunflower oil

  • 2 onions, thinly sliced

  • 2.5 ml/1/2 tsp turmeric

  • 1.5 ml/1/4 tsp chili powder

  • 8 hard-boiled (hard-cooked) eggs

  • 30 ml/2 tbsp chopped coriander (cilantro)


Method:

  1. Wash and drain the rice thoroughly. Place in a large heavy-based saucepan with the water and salt.

  2. Bring to the boil, reduce the heat, cover and simmer gently for 15 minutes or until the rice is almost tender and has absorbed all the liquid.

  3. Meanwhile, heat the oil in a separate pan. Add the onions and fry (sauté) for about 4 minutes, stirring until soft and golden.

  4. Stir in the turmeric and chili powder and fry for 1 minute, stirring.

  5. Add the shelled whole eggs and cook, stirring gently for 3 minutes until the eggs are golden. Add the rice to the eggs with 15 ml/1 tbsp water.

  6. Cover tightly and cook very gently for 5 minutes until piping hot. Stir in the coriander and serve hot.
