Cheese, Egg, and Cream Based Recipes - Egg Fried Rice with Bacon

Ingredients

  • 3 onions, thinly sliced

  • 5 rashers (slices) streaky bacon, rinded and cut into thin strips

  • 30 ml/2 tbsp sunflower oil

  • 100 g/4 oz/1 cup frozen peas

  • 50 g/2 oz /1/4 cup unsalted (sweet) butter

  • 4 eggs, beaten

  • Salt and freshly ground black pepper

  • 350 g/12 oz/3 cups cooked long­grain rice


Method:

  1. Fry (sauté) the onion and bacon in the oil for 2 minutes, stirring.

  2. In a separate pan, cook the peas in the butter for 2 minutes. Add the eggs to the bacon and onion and season lightly.

  3. Swirl the pan so the egg covers the base. Cook gently until the egg sets, then scramble lightly but don't break up the egg too much.

  4. Stir in the rice and peas and heat through, tossing gently so the rice grains stay separate. Serve straight away.
