Cheese, Egg, and Cream Based Recipes - Fettucci with Goat's Cheese and Chives

Ingredients                    

  • 350 g/12 oz fettucci

  • 15 g/1 tbsp unsalted (sweet) butter

  • 3 garlic cloves, crushed

  • 250 ml/8fl oz/1 cup crème fraiche

  • 225 g/8 oz goat's cheese, crumbled

  • Salt and freshly ground black pepper

  • 60 ml/4 tbsp snipped chives


Method:

  1. Cook the pasta according to the packet directions. Drain and return to the pan.

  2. Melt the butter in a saucepan. Add the garlic and fry (sauté) very gently for 2 minutes but do not allow to brown.

  3. Add the crème fraiche and increase the heat slightly. Stir in the cheese and stir until it has melted.

  4. Season to taste and add half the chives. Pour over the pasta, toss gently and serve garnished with the remaining chives.
