Ingredients

350 g/12 oz spaghettini
-
120 ml/4 fl oz/1/2 cup
olive oil
-
2 garlic cloves,
crushed
-
4 ripe tomatoes, diced
-
Salt and freshly
ground black pepper
-
50 g/2 oz/1/2 cup basil
leaves, torn into small pieces
-
50 g/2 oz goat's
cheese, roughly crumbled
-
A few black olives
Method:

Cook
the
spaghettini according to the packet directions.
Drain.

Meanwhile, heat the oil in a saucepan. Add
the garlic and cook gently for 1 minute.

Add the
tomatoes and
a little salt and pepper and
cook
gently for 1-2 minutes, stirring, until heated through but the tomatoes
still hold their shape.

Add the basil leaves and
toss gently. Add the spaghettini and toss well.
-
At
the last minute, add the cheese, toss again and
serve immediately with a few olives scattered over.
