Cheese, Egg, and Cream Based Recipes - Goatherd Mountain Special

Ingredients                          

  • 350 g/12 oz spaghettini

  • 120 ml/4 fl oz/1/2 cup olive oil

  • 2 garlic cloves, crushed

  • 4 ripe tomatoes, diced

  • Salt and freshly ground black pepper

  • 50 g/2 oz/1/2 cup basil leaves, torn into small pieces

  • 50 g/2 oz goat's cheese, roughly crumbled

  • A few black olives


Method:

  1. Cook the spaghettini according to the packet directions. Drain.

  2. Meanwhile, heat the oil in a saucepan. Add the garlic and cook gently for 1 minute.

  3. Add the tomatoes and a little salt and pepper and cook gently for 1-2 minutes, stirring, until heated through but the tomatoes still hold their shape.

  4. Add the basil leaves and toss gently. Add the spaghettini and toss well.

  5. At the last minute, add the cheese, toss again and serve immediately with a few olives scattered over.
