Cheese, Egg, and Cream Based Recipes - Golden Egg and Onion Supper

Ingredients

  • 225 g/8 oz/1 cup long-grain rice

  • 5 ml/1 tsp turmeric

  • 50g/2 oz/1/4 cup butter

  • 450 g/1 lb onions, thinly sliced

  • 6 hard-boiled (hard-cooked) eggs, sliced

  • 25 g/1 oz/1/4 cup plain (all-purpose) flour

  • 300 ml/1 1/4 cups milk

  • 5 ml/1 tsp made mustard

  • A pinch of cayenne

  • Salt and freshly ground black pepper

  • 100 g/4 oz Cheddar cheese, grated


Method:

  1. Cook the rice in plenty of boiling salted water to which the turmeric has been added. Drain well and turn into a lightly greased flameproof dish.

  2. Meanwhile, melt half the butter and fry (sauté) the onions until soft and lightly golden. Spoon over the rice and top with the eggs.

  3. Melt the remaining butter in the onion pan. Stir in the flour and cook for 1 minute.

  4. Remove from the heat and blend in the milk, mustard, cayenne and a little salt and pepper.

  5. Return to the heat, bring to the boil and cook for 2 minutes, stirring all the time. Stir in half the cheese and spoon over the eggs.

  6. Top with the remaining cheese and grill (broil) for 4 minutes until golden, bubbling and piping hot.
