Ingredients

350 g/12 oz spaghetti
-
90 ml/6 tbsp olive oil
-
2 garlic cloves,
chopped
-
4 spring onions
(scallions), chopped
-
5 ml/1 tsp dried
oregano
-
1 large beefsteak
tomato, diced
-
Freshly ground black pepper
-
75 g/3 oz/1/2 cup Greek
black olives
-
30 ml/2 tbsp freshly
grated Parmesan cheese
-
100 g/4 oz chilled
Feta cheese, crumbled
Method:

Cook the spaghetti
according to the packet directions. Drain and return
to the pan.

Meanwhile, heat two-thirds of the oil in
a saucepan. Add the garlic and spring onions and
soften for 1 minute.

Add the oregano, tomato and a
good grinding of pepper and cook gently for 1-2
minutes until hot but the tomatoes still hold their
shape.

Add the remaining ingredients except the rest
of the olive oil and toss lightly over a gentle heat
to combine.

Quickly add the remaining olive oil to
the spaghetti, toss gently and pile on to serving
plates.

Spoon the Feta mixture over and serve
straight away.
