Cheese, Egg, and Cream Based Recipes - Greek-style Gourmet

Ingredients                          

  • 350 g/12 oz spaghetti

  • 90 ml/6 tbsp olive oil

  • 2 garlic cloves, chopped

  • 4 spring onions (scallions), chopped

  • 5 ml/1 tsp dried oregano

  • 1 large beefsteak tomato, diced

  • Freshly ground black pepper

  • 75 g/3 oz/1/2 cup Greek black olives

  • 30 ml/2 tbsp freshly grated Parmesan cheese

  • 100 g/4 oz chilled Feta cheese, crumbled


Method:

  1. Cook the spaghetti according to the packet directions. Drain and return to the pan.

  2. Meanwhile, heat two-thirds of the oil in a saucepan. Add the garlic and spring onions and soften for 1 minute.

  3. Add the oregano, tomato and a good grinding of pepper and cook gently for 1-2 minutes until hot but the tomatoes still hold their shape.

  4. Add the remaining ingredients except the rest of the olive oil and toss lightly over a gentle heat to combine.

  5. Quickly add the remaining olive oil to the spaghetti, toss gently and pile on to serving plates.

  6. Spoon the Feta mixture over and serve straight away.
