Cheese, Egg, and Cream Based
Recipes - High Society Pasta
Ingredients

350 g/12 oz bucatini
-
15 g/1 tbsp
butter
-
4 eggs, beaten
-
150 ml/2/3 cup
single (light) cream
-
100 g/4 oz/1 cup
smoked salmon, cut into tiny strips
-
Freshly ground pepper
-
A little red Danish lumpfish roe (optional)

Chopped parsley
Method:

Cook the bucatini
according to the packet directions. Drain.

Melt the
butter in a saucepan. Add the eggs and cream and
whisk lightly.

Stir over a gentle heat until just
beginning to scramble but still quite runny.
-
Stir in
the salmon and good grinding of black pepper.
Immediately add the bucatini and toss gently over a
low heat until just scrambled but still creamy.
-
Pile
on to hot plates and top with a little lumpfish
roe, if liked, and a sprinkling of chopped parsley.
