Cheese, Egg, and Cream Based Recipes - Indian Rice with Egg

Ingredients

  • 450 g/1lb/2 cups basmati rice

  • 750 ml/3 cups chicken stock

  • Salt and freshly ground black pepper

  • 60 ml/4 tbsp groundnut (peanut) oil

  • 2 onions, sliced

  • 1 garlic clove, crushed

  • 10 ml/2 tsp chopped coriander (cilantro)

  • 2.5 ml/1/2 tsp turmeric

  • 1.5 ml/1/4 tsp chili powder

  • 8 hard-boiled (hard-cooked) eggs, quartered


Method:

  1. Place the washed rice in a large pan with the stock and a little salt and pepper.

  2. Bring to the boil, reduce the heat, cover and simmer for 15 minutes until the rice is almost tender and has absorbed the liquid.

  3. Heat the oil in a separate pan and fry (sauté) the onions and the garlic for 2 minutes.

  4. Stir in the coriander, turmeric and chili and cook for 1 minute. Add to the rice and stock and add 30 ml/2 tbsp water.

  5. Lay the eggs on top. Bring to the boil, cover with foil then a lid and cook over a gentle heat for 5 minutes.

  6. Leave undisturbed for 5 minutes then fluff up and serve.
