Cheese, Egg, and Cream Based Recipes - Italian Lunchtime Fettuccine

Ingredients                                                                            

  • 450 g/1lb/4 cups fettuccine

  • 100 g/4 oz/1/2 cup unsalted (sweet) butter

  • 300 ml/1 1/4 cups double (heavy) cream

  • Salt and freshly ground black pepper


Method:

  1. Cook the fettuccine according to the packet directions. Drain and return to the saucepan.

  2. Cut the butter into flakes and add to the pan with the cream. Stir over a gentle heat until well coated.

  3. Season thoroughly with a little salt and lots of black pepper. Serve with crusty bread and a bowl of green olives.
