Cheese, Egg, and Cream Based Recipes - Minted Egg Pilat

Ingredients

  • 225 g/8 oz/1 cup Thai fragrant rice or basmati rice

  • 450 ml/2 cups boiling water

  • 5 ml/1 tsp salt

  • 2 eggs, beaten

  • Grated rind and juice of 1/2 lemon

  • 15 ml/1 tbsp chopped mint

  • 50 g/2 oz/1 /2 cup grated Parmesan cheese


Method:

  1. Place the rice in a pan with the water and salt. Bring to the boil, cover, reduce the heat and cook very gently for 15-20 minutes or until the rice is tender and has absorbed all the liquid.

  2. Adding a little more water after 15 minutes if dry and still not quite tender.

  3. Stir in the eggs, lemon rind and juice, mint and half the cheese. Toss over a gentle heat until lightly scrambled but still creamy.

  4. Serve straight away, sprinkled with the remaining cheese.
