Cheese, Egg, and Cream Based
Recipes - Minted Egg Pilat
Ingredients

225 g/8 oz/1
cup Thai fragrant rice
or basmati rice
-
450 ml/2 cups boiling water
-
5 ml/1 tsp salt
-
2 eggs, beaten
-
Grated rind and
juice of 1/2 lemon
-
15 ml/1 tbsp chopped mint
-
50 g/2 oz/1 /2 cup grated Parmesan
cheese
Method:
-
Place the rice in a pan with the water and salt.
Bring to the boil, cover, reduce the heat and cook
very gently for 15-20 minutes or until the rice is
tender and has absorbed all the liquid.

Adding a
little more water after 15 minutes if dry and still
not quite tender.

Stir in the eggs, lemon rind and
juice, mint and half the cheese. Toss over a gentle
heat until lightly scrambled but still creamy.

Serve
straight away, sprinkled with the remaining cheese.
