Cheese, Egg, and Cream Based
Recipes - Parmesan Rice with Basil
Ingredients

30 ml/2 tbsp olive oil

1 onion, finely chopped
-
225 g/8 oz/1 cup
arborio or other risotto rice
-
600 ml/1 pt/2 1/2 cups
hot chicken or vegetable stock

50 g/2 oz/1/2 cup
chopped basil

50 g/2 oz/1/2 cup
chopped parsley
-
Salt and freshly ground black pepper

200 g/4 oz/1 cup
freshly grated Parmesan cheese
Method:

Heat the oil in a
large saucepan. Add the onion and fry (sauté) for 2
minutes.

Stir in the rice and cook for 1 minute. Add
2 ladlefuls of the stock and simmer until it is
absorbed.

Repeat until the rice is tender and creamy
(about 15-20 minutes).

Stir in the herbs, some salt
and pepper and half the cheese. Pile on to a warm
serving dish and top with the remaining cheese.
