Cheese, Egg, and Cream Based Recipes - Penne Piperade

Ingredients                                                                            

  • 100 g/4 oz/1 cup penne

  • 15 ml/1 tbsp olive oil

  • 15 g/1 tbsp butter

  • 2 onions, sliced

  • 2 green (bell) peppers, sliced

  • 4 large tomatoes, quartered

  • 1 garlic clove, crushed

  • 4 eggs, beaten

  • Salt and freshly ground black pepper


Method:

  1. Cook the penne according to the packet directions. Drain. Meanwhile heat the oil and butter in a large frying pan (skillet).

  2. Add the onions, peppers, tomatoes and garlic and stir-fry for 5 minutes until soft and lightly golden.

  3. Add the pasta, the eggs, a little salt and lots of pepper. Cook, lifting and stirring gently until the mixture has set.

  4. Serve straight from the pan.
