Penne Piperade
Ingredients

100 g/4 oz/1 cup penne
-
15 ml/1 tbsp olive oil
-
15 g/1 tbsp
butter
-
2 onions, sliced
-
2 green (bell) peppers,
sliced
-
4 large tomatoes, quartered
-
1 garlic clove,
crushed
-
4 eggs, beaten
-
Salt and freshly ground
black pepper
Method:
-
Cook the penne according to the packet directions. Drain. Meanwhile heat
the oil and butter in a large frying pan (skillet).

Add the onions, peppers, tomatoes and garlic and
stir-fry for 5 minutes until soft and lightly
golden.

Add the pasta, the eggs, a little salt and
lots of pepper. Cook, lifting and stirring gently
until the mixture has set.

Serve straight
from
the pan.
