Cheese, Egg, and Cream Based Recipes - Piquant Goat's Cheese and Radicchio Farfalle

Ingredients                          

  • 25 g/8 oz/2 cups farfalle

  • 25 g/1 oz/2 tbsp butter

  • 2 garlic cloves, finely chopped

  • 1 small raddichio, coarsely shredded

  • Salt

  • 5 ml/1 tsp pickled green peppercorns

  • 250 ml/8fl oz/1 cup double (heavy) cream

  • 50 g/2 oz goat's cheese, crumbled

  • Freshly ground black or green pepper


Method:

  1. Cook the pasta according to the packet directions. Drain.

  2. Meanwhile, melt the butter in a saucepan. Add the garlic and radicchio, toss then cover and cook gently for 4 minutes.

  3. Season lightly with salt and add the peppercorns. In a separate pan, heat the cream. Add half the cheese and whisk until smooth.

  4. Stir in the radicchio mixture. Add to the farfalle with the remaining cheese.

  5. Toss quickly and serve garnished with a good grinding of black or green pepper.
