Cheese, Egg, and Cream Based Recipes - Rice Gorgonzola and Walnut Wheels

Ingredients                          

  • 225 g/8 oz/2 cups whole wheat ruote

  • 2 garlic cloves, finely chopped

  • 25 g/1 oz/2 tbsp butter

  • 225 g/8 oz Gorgonzola, crumbled

  • 50 g/2 oz/1/2 cup walnuts, chopped

  • Salt and freshly ground black pepper

  • 30 ml/2 tbsp milk or single (light) cream

  • 30 ml/2 tbsp freshly grated Parmesan cheese

  • Chopped parsley


Method:

  1. Cook the pasta according to the packet directions, drain. Meanwhile, cook the garlic gently in the butter for 1 minute.

  2. Add the remaining ingredients except the parsley and heat through gently until melted and well combined. Do not boil.

  3. Add to the pasta and toss well. Pile on to serving plates and garnish with parsley.
