Cheese, Egg, and Cream Based Recipes - The Rice of a Lifetime

Ingredients

  • 350 g/12 oz/1 1/2 cups arborio or other risotto rice

  • 225 g/8 oz Mozzarella cheese, cubed

  • 150 g/5 oz boiled ham, diced

  • 2 size 1 egg yolks, lightly beaten

  • 30 ml/2 tbsp freshly grated Parmesan cheese

  • Salt and freshly ground black pepper

  • Parsley sprigs


Method:

  1. Cook the rice in plenty of boiling salted water for 18 minutes. Drain thoroughly and return to the saucepan.

  2. Add all the remaining ingredients except the parsley. Toss over a gentle heat until well combined.

  3. Pile on to serving plates, garnish with parsley and serve immediately.
