Ingredients

350 g/12 oz/1 1/2 cups
arborio or other risotto rice
-
225 g/8 oz Mozzarella
cheese, cubed
-
150 g/5 oz boiled ham, diced
-
2 size 1 egg yolks, lightly
beaten
-
30 ml/2 tbsp freshly grated Parmesan cheese
-
Salt and freshly
ground black pepper

Parsley sprigs
Method:
-
Cook the rice in plenty of boiling salted water for
18 minutes. Drain thoroughly and return to the
saucepan.

Add all the remaining ingredients except the
parsley. Toss over a gentle heat until well
combined.
-
Pile on to serving plates, garnish with
parsley and serve immediately.
