Cheese, Egg, and Cream Based Recipes - Salsa Alfredo (for fresh pasta)

Ingredients                                                                            

  • 350 g/12 oz any fresh pasta

  • 450 ml/2 cups double (heavy) cream

  • 50 g/2 oz/1/4 cup butter

  • 175 g/6 oz/1 1/2 cups freshly grated Parmesan cheese

  • Freshly ground black pepper

  • A little crisp, crumbled bacon (optional)


Method:

  1. Cook the fresh pasta (according to the packet directions). Drain.

  2. Meanwhile, bring the cream and butter to the boil in a saucepan. Reduce the heat and simmer for 1 minute.

  3. Add half the cheese and some pepper and whisk until smooth.

  4. Add to the pasta with the remaining cheese and toss over a gentle heat.

  5. Pile on to warm plates add a good grinding of pepper and serve topped with crumbled bacon, if liked.
