Cheese, Egg, and Cream Based Recipes - Spaghettini Crisps

Ingredients                      

  • 225 g/8 oz spaghettini

  • Oil for deep-frying

  • 2.5 ml/1/2 tsp cayenne

  • 10 ml/2 tsp salt

  • 60 ml/4 tbsp grated Parmesan cheese


Method:

  1. Cook the pasta according to the packet directions, drain thoroughly and cut into short lengths.

  2. Heat the oil to 180°C/350°F and deep-fry the spaghettini a batch at a time until crisp and golden (do not cook too much at one go).

  3. Sprinkle each batch with the cayenne mixed with salt, and then with some Parmesan cheese. Pile into a bowl and serve with drinks.
