Cheese, Egg, and Cream Based Recipes - Spicy Farmhouse Pasta

Ingredients                  

  • 350 g/12 oz/3 cups rigatoni

  • 30 ml/2 tbsp unsalted (sweet) butter

  • 450 g/1 lb sweet cure streaky bacon, rinded and diced

  • 750 ml/3 cups double (heavy) cream

  • 750 g/1 1/2 lb farmhouse Cheddar, grated

  • 5 ml/1 tsp made English mustard

  • A few drops of Tabasco sauce

  • Salt and freshly ground black pepper


Method:

  1. Cook the pasta according to the packet directions, drain. Meanwhile, melt the butter in a large pan.

  2. Add the bacon and fry (sauté) for 4-5 minutes until crisp. Drain on kitchen paper. Add the cream to the butter and bacon fat.

  3. Bring to the boil, stirring. Add the cheese and stir until it has melted and thickened the sauce.

  4. Stir in the mustard and Tabasco sauce. Season to taste. Pile the pasta on to warm plates.

  5. Spoon the sauce over and sprinkle liberally with the bacon.
