Cheese, Egg, and Cream Based Recipes - Tagliatelle with Fried Mozzarella

Ingredients                                                                            

  • 225 g/8 oz tagliatelle

  • 60 ml/4 tbsp olive oil

  • 175 g/6 oz Mozzarella cheese, cut into 4 thick slices

  • 30 ml/2 tbsp chopped basil

  • Juice of 1/2 lemon

  • Salt and freshly ground black pepper


Method:

  1. Cook the pasta according to the packet directions. Drain, divide between 4 warm plates and keep warm.

  2. Heat the oil in a large heavy frying pan (skillet). Add the Mozzarella and fry (sauté), moving the slices so they don't stick, until the bases are browned.

  3. Turn over quickly and brown the other sides. Quickly transfer to the pasta, spoon the oil over.

  4. Sprinkle with the basil and lemon juice and season with salt and lots of pepper. Serve immediately.
