Cheese, Egg, and Cream Based Recipes - Tagliatelle Verdi con Ricotta

Ingredients              

  • 350 g/12 oz green tagliatelle (verdi)

  • 225 g/8 oz/1 cup unsalted (sweet) butter

  • 1 kg/4 1/2 cups Ricotta cheese

  • Salt and freshly ground black pepper

  • Paprika


Method:

  1. Cook the pasta according to the packet directions. Drain and return to the pan.

  2. Add the butter in small flakes and toss until melted. Spoon the Ricotta over and season well with salt and pepper.

  3. Toss, pile on to plates and sprinkle with paprika before serving.
