Cheese, Egg, and Cream Based Recipes - Tortellini with Piquant Sunflower Sauce

Ingredients

  • 2 garlic cloves, crushed

  • 45 ml/3 tbsp chopped parsley

  • 25 g/1 oz/1/4 cup grated Parmesan cheese

  • 30 ml/2 tbsp sunflower seeds

  • 30 ml/2 tbsp capers

  • Salt and freshly ground black pepper

  • 120 ml/4 fl oz/1/2 cup sunflower oil

  • 250 g/9 oz/1 packet tortellini stuffed with cheese and spinach

  • 15 ml/1 tbsp olive oil


Method:

  1. Puree or pound the garlic, parsley, cheese, sunflower seeds and capers until the mixture forms a paste. Season well.

  2. Gradually beat in the sunflower oil until the paste glistens. Cook the tortellini according to the packet directions. Drain and return to the pan.

  3. Add the sauce and toss well over a gentle heal. Serve immediately, drizzled with the olive oil.
