Dessert Recipes - Almond Strawberry Rice

Ingredients

  • 225 g/8 oz/2 cups strawberries, sliced

  • 15 ml/1 tbsp kirsch

  • 15 ml/1 tbsp caster (superfine) sugar

  • 230 g/15 1/2 oz/1 large can creamed rice

  • A few drops of almond essence (extract)

  • 150 ml/2/3 cup double (heavy) cream

  • 25 g/1oz/1/4 cup toasted flaked almonds


Method:

  1. Place the strawberries in a pan with the kirsch and sugar. Cover and stew gently for 3 minutes.

  2. Turn into an ovenproof dish. Mix the rice with the almond essence. Spoon over.

  3. Pour over the cream and bake at 190°C/375°F/gas mark 5 until the top is golden brown. Sprinkle with the almonds and serve warm.
