Dessert Recipes - Apricot Smoothie

Ingredients

  • 410 g//1 large can apricots in natural juice

  • 45 ml/3 tbsp ground rice

  • 30 ml/2 tbsp caster (superfine) sugar

  • 15 g/1 tbsp butter

  • Crème frafche

  • Chopped pistachio nuts


Method:

  1. Puree the apricots with their juice in a blender or food processor. Make up to 600 ml/2 1/2 cups with water.

  2. Place in a saucepan and stir in the rice. Bring to the boil and simmer for 5 minutes, stirring, until thick.

  3. Sweeten to taste with the sugar and stir in the butter. Pour into individual glass dishes and chill until set.

  4. Top with crème fraiche and chopped pistachio nuts.
