Recipes - Apricot Smoothie
Ingredients
Method:
-
Puree the apricots with their juice in a blender or
food processor. Make up to 600 ml/2 1/2 cups
with water.

Place in a saucepan and stir in the
rice. Bring to the boil and simmer for 5 minutes,
stirring, until thick.

Sweeten to taste with the
sugar and stir in the butter. Pour into individual
glass dishes and chill until set.
-
Top with crème
fraiche and chopped pistachio nuts.
