Ingredients

450 ml/2 cups milk
-
100 g/4 oz/1/2 cup short-grain
(pudding) rice
-
A pinch of salt
-
Grated rind and juice of
1 lemon
-
45 ml/3 tbsp
caster
(superfine) sugar

1 sachet of powdered gelatine
-
450 g/1lb/1 large
can
fruit cocktail in natural juice

250 ml/8
fl
oz/1 cup whipping cream, whipped
Method:

Put the milk in a saucepan with the rice, salt and lemon rind.

Bring to
the boil, reduce the heat and simmer gently for 30
minutes or until the rice is really tender and
creamy.

Stir in the sugar and leave to cool. Soften
the gelatine in the lemon juice, then stand in a pan
of hot water or microwave to dissolve completely.

Strain off the juice from the can of fruit. Add 250
ml/1 cup to the gelatine and stir
well.

Stir into the cold rice with the drained
fruit. Fold in the whipped cream. Turn into a
lightly oiled mould (mold) and chill until set.

Loosen the edges, dip the mould in hot water, then
turn out on to a serving dish and serve cold.
