Dessert Recipes - Banana and Rhubarb Conde

Ingredients

  • 450 g/1lb pink forced rhubarb, trimmed and cut into 2.5 cm/1 in lengths

  • 175 g/6 oz/1/4 cup caster (superfine) sugar

  • Grated rind and juice of 1 orange

  • 450 g/1 lb bananas (unpeeled weight)

  • 430 g/15 1/2 oz/1 large can creamed rice


Method:

  1. Place the rhubarb in a casserole (Dutch oven) with the sugar and orange juice.

  2. Stir well, then cover and cook in the oven at 160°C/325°F/gas mark 3 for 35 minutes. Remove from the oven and leave to cool.

  3. Slice the bananas thinly and place half in 1 large or 4-6 individual glass dishes.

  4. Mix the orange rind with the rice and spoon half over the bananas. Spoon half of the cool rhubarb over.

  5. Repeat the layers. Chill until ready to serve.
