Dessert Recipes - Chocolate Mousse Layer

Ingredients

  • 175 g/6 oz/1 1/2 cups plain (semi­sweet) chocolate, broken into pieces

  • 3 size 1 eggs, separated

  • 15 ml/1 tbsp rum or brandy

  • 430 g/1 large can chocolate rice pudding

  • Whipped cream

  • A little grated chocolate


Method:

  1. Melt the chocolate in a bowl over a pan of hot water or in the microwave. Stir in the egg yolks and brandy or rum.

  2. Whisk the egg whites until stiff and fold into the chocolate with a metal spoon.

  3. Layer the rice and chocolate mousse in sundae glasses. Chill until set.

  4. Decorate with whipped cream and a little grated chocolate.
