Recipes - Coffee and Walnut Rice Pudding
Ingredients

45 ml/3 tbsp pudding
(short-grain) rice
-
30 ml/2 tbsp light
brown sugar
-
600 ml/2 1/2 cups
milk
-
15 ml/1 tbsp instant
coffee powder
-
50 g/2 oz/1/2 cup
chopped walnuts
-
Clotted cream
Method:
-
Mix the rice with the sugar, milk and
coffee powder
in an ovenproof dish. Stir in the walnuts.

Bake at
160°C/325°F/gas mark 3 for 2 hours or until the rice
is tender and creamy.
-
Stirring twice during the
first hour. Serve with clotted cream.
