Dessert Recipes - Coffee and Walnut Rice Pudding

Ingredients

  • 45 ml/3 tbsp pudding (short-grain) rice

  • 30 ml/2 tbsp light brown sugar

  • 600 ml/2 1/2 cups milk

  • 15 ml/1 tbsp instant coffee powder

  • 50 g/2 oz/1/2 cup chopped walnuts

  • Clotted cream


Method:

  1. Mix the rice with the sugar, milk and coffee powder in an ovenproof dish. Stir in the walnuts.

  2. Bake at 160°C/325°F/gas mark 3 for 2 hours or until the rice is tender and creamy.

  3. Stirring twice during the first hour. Serve with clotted cream.
