Dessert Recipes - Dutch Macaroni Cream

Ingredients

  • 1 liter/4 1/4 cups full-cream milk

  • 150 g/5 oz/1 1/4 cups short-cut macaroni

  • Grated rind of 1/2 lemon

  • 75 g/3 oz/1/2 cup seedless (pitless) raisins

  • 75 g/3 oz/1/3 cup granulated sugar

  • 40 g/3 tbsp butter

  • 50 g/2 oz/1 cup cake crumbs


Method:

  1. Bring the milk to the boil in a saucepan. Add the macaroni, lemon rind and raisins.

  2. Bring to the boil, reduce the heat, cover and simmer for 40 minutes. Stir in half the sugar and butter.

  3. Turn into an ovenproof dish. Melt the remaining butter and stir in the cake crumbs and the remaining sugar.

  4. Sprinkle over the macaroni and bake in a hot oven at 200°C/400°F/gas mark 6 for about 15 minutes until golden on top.
