Ingredients

g/4 oz/1/2 cup round-grain
(pudding) rice

750 ml/3 cups milk

120 ml/4 fl oz/1/2 cup double (heavy) cream

2 egg
yolks

g/4 oz/1/2 cup light brown sugar

pinch of white pepper

ml/1/4 tsp ground cloves

m/1/4 tsp ground mace

g/2 oz/1/3 cup currants

g/2 oz/1/3 cup stoned (pitted) dates, chopped

g/1 oz/2 tbsp unsalted (sweet) butter
Method:
-
Mix the rice and milk in a large, heavy saucepan. Bring to the boil.

Reduce the heat, cover and simmer gently for 30
minutes or until the rice is tender and creamy.

Blend in the remaining ingredients, bring to the
boil, reduce the heat and cook very gently for 10
minutes, stirring occasionally.

Turn into a glass
dish, leave to cool, then chill before serving.
