Dessert Recipes - Everyday Rice Pudding

Ingredients

  • 600 ml/1 pt/2 1/2 cups milk

  • 30 ml/2 tbsp dried milk (non-fat milk) powder (optional)

  • 75 g/3 oz/1/3 cup short-grain (pudding) rice

  • 25 g/1 oz/2 tbsp granulated sugar

  • A few drops of vanilla essence

  • (extract) Grated nutmeg

  • A knob of butter


Method:

  1. Mix the milk, milk powder (if using), rice, sugar and vanilla in a 1.2 liter/2 pt/5 cup ovenproof dish.

  2. Sprinkle with nutmeg and dot with butter. Bake at 160°C/325°F/gas mark 3 for 2 hours until golden on top and creamy underneath.
