Dessert Recipes - Italian Surprise

Ingredients

  • 350 g/12 oz/1 1/2 cups arborio or other risotto rice

  • 75 g/3 oz/1/2 cup seedless (pitless) raisins

  • 45 ml/3 tbsp rum

  • 250 ml/8 fl oz/1 cup double (heavy) cream

  • 1 size 1 egg, beaten

  • 225 g/8 oz/1 cup Ricotta cheese

  • 100 g/4 oz/1 cup grated Parmesan cheese


Method:

  1. Cook the rice in plenty of boiling water for 18 minutes. Drain, rinse with cold water, drain again and leave to cool.

  2. Meanwhile, put the raisins in a bowl with the rum and leave to soak. Whip the cream until stiff.

  3. Stir the egg, raisins and rum, the Ricotta and Parmesan into the rice. Lastly, fold in the cream.

  4. Spoon into a glass dish, level the surface and chill before serving.
