Dessert Recipes - Lemon Meringue Surprise

Ingredients

  • 100 g/4 oz/1 cup conchiglietti or other soup pasta

  • 450 ml/2 cups milk

  • 1 small can evaporated milk

  • 5 ml/1 tsp ground cinnamon

  • 150 g/5 oz/2/3 cup caster (superfine) sugar

  • 1 packet lemon meringue pie filling

  • 300 ml/1 1/4 cups water

  • 2 eggs, separated


Method:

  1. Put the pasta in a saucepan with the milk, evaporated milk and cinnamon.

  2. Bring to the boil, stirring. Reduce the heat, cover and simmer gently for about 15 minutes or until the pasta is soft and the milk is creamy.

  3. Stir in 25 g/1 oz/2 tbsp of the sugar and turn the mixture into an oven­proof dish.

  4. Make up the pie filling according to the packet directions with the water and both egg yolks. Spoon over the pasta.

  5. Whisk the egg whites until stiff and gradually whisk in the remaining sugar until stiff and glossy.

  6. Pile on top of the lemon mixture and bake at 180°C/350°F/gas mark 4 for about 15 minutes until the top is just turning golden. Serve hot.
