Dessert Recipes - M'hal'labeeyeh

Ingredients

  • 15 ml/1 tbsp corn flour (cornstarch)

  • 15 g/2 tbsp ground rice

  • 600 ml/2 1/2 cups milk

  • 100 g/4 oz/1/2 cup sugar

  • 5 ml/1 tsp orange flower water

  • Crystallized (candied) orange slices


Method:

  1. Blend the corn flour and rice to a paste with a little of the milk in a heavy-based saucepan.

  2. Stir in the remaining milk and the sugar. Bring to the boil.

  3. Reduce the heat and simmer until the mixture thickens and coats the back of a spoon, stirring all the time.

  4. Remove from the heat and stir in the orange flower water. Pour into individual dishes, leave to cool, then chill for several hours.

  5. Decorate with crystallized orange slices before serving.
