Dessert Recipes - Peach Rice Ring

Ingredients

  • 15 g/1 tbsp powdered gelatine

  • 60 ml/4 tbsp water

  • 2 x 430 g/2 x 15 oz/2 large cans creamed rice pudding

  • 5 ml/1 tsp vanilla essence (extract)

  • 425 g/15 oz/1 large can peach slices, drained

  • 150 ml/2/3 cup whipped cream

  • Glace (candied) cherries

  • Angelica leaves


Method:

  1. Dissolve the gelatine in the water in a bowl over a pan of hot water or in the microwave (do not allow to boil).

  2. Stir into the rice with the vanilla essence. Turn into a wetted ring mould (mold) and chill until set.

  3. Turn out on to a serving plate. Fill the centre with the peach halves, arranged attractively.

  4. Decorate with whipped cream, glace cherries and angelica leaves.
