Dessert Recipes - Poached Pears on Rice

Ingredients

  • 50 g/2 oz/1/4 cup short-grain (pudding) rice

  • 600 ml/1 pt/2 1/2 cups milk

  • 45 ml/3 tbsp caster (superfine) sugar

  • 15 g/1 tbsp butter

  • 4 pears, peeled, halved and cored

  • 300 ml/1 1/4 cups apple juice

  • 2.5 cm/1 in piece cinnamon stick

  • 45 ml/3 tbsp light brown sugar

  • Crème fraiche

  • Chopped toasted nuts


Method:

  1. Cook the rice in the milk for about 30 minutes until tender and creamy, stirring occasionally. Stir in the caster sugar and butter and leave to cool.

  2. Meanwhile, place the pears in a saucepan with the apple juice, cinnamon and light brown sugar.

  3. Cover and simmer gently for about 10 minutes until the pears are tender. Leave to cool in the syrup.

  4. Spoon the cold rice into glass dishes. Lay 2 pear halves on top of each and spoon a little of the syrup over.

  5. Put a dollop of crème fraiche on top and sprinkle with chopped nuts.
