Dessert Recipes - Princess of Pudding

Ingredients

  • 50 g/2 oz/1 cup white bread, crusts removed and diced

  • 300 ml/1 1/4 cups milk

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 2 size 4 eggs, separated

  • Grated rind of 1 lemon

  • 75 g/3 oz/1/3 cup caster (superfine) sugar

  • 60 ml/4 tbsp apricot jam (conserve)

  • 430 g/15 1/2 oz/1 large can creamed rice


Method:

  1. Put the bread in a large buttered baking dish. Warm the milk and butter until the fat melts.

  2. Beat in the egg yolks, lemon rind and 25 g/2 tbsp of the sugar.

  3. Pour over the bread and bake in the oven at 180°C/350°F/gas mark 4 for 15-20 minutes or until set.

  4. Remove from the oven and spread the jam over. Top with the creamed rice.

  5. Whisk the egg whites until stiff and fold in the remaining sugar with a metal spoon.

  6. Pile on top of the rice to cover completely and return to the oven for a further 10 minutes or until golden. Serve warm.
