Dessert Recipes - Rice and Citrus Mallow

Ingredients

  • 1 small orange

  • 1 lemon

  • 1 lime

  • 75 g/3 oz/1/3 cup short-grain (pudding) rice

  • 900 ml/3 1/4 cups milk

  • 45 ml/3 tbsp granulated sugar

  • 14 white marshmallows

  • 45 ml/3 tbsp double (heavy) cream


Method:

  1. Pare the rind thinly from the fruits. Cut into thin strips and boil in water for 5 minutes. Drain, rinse with cold water and drain again.

  2. Squeeze the juice from the fruits. Put the rice, milk and sugar in a saucepan.

  3. Bring to the boil, reduce the heat and simmer gently for 30 minutes or until the rice is really tender, stirring occasionally.

  4. Stir in the marshmallows, then the fruit juices and cream.

  5. Spoon into individual glass dishes and sprinkle with the fruit rinds. Chill until ready to serve.
