Ingredients

g/4 oz/1/2 cup short-grain
(pudding) rice
-
450 ml/2 cups water
-
375 ml/13
fl
oz full-cream milk
-
100
g/4 oz/1/2 cup granulated sugar
-
10 ml/2 tsp rose water
-
A few
crystallized (candied) rose
petals (optional)
Method:
-
Wash the rice
thoroughly in several changes of cold water. Place
in a saucepan and add the water.

Bring to the boil
and simmer for 20 minutes. Stir in the milk, sugar
and rose water and simmer, stirring until thick and
creamy and the rice is tender.

Cool slightly, then
pour into individual dishes. Leave until cold, then
chill before serving decorated with crystallized
rose petals, if liked.
