Dessert Recipes - Rockley Beach Pudding

Ingredients

  • 75 g/4 cup short-cut macaroni

  • 425 g/15 oz/1 large can custard

  • 30 ml/1 tbsp rum

  • 2 bananas

  • 5 ml/1 tsp lemon juice

  • 150 ml/2/3 cup whipped cream

  • 2 ginger-nut biscuits (cookies), crushed


Method:

  1. Cook the macaroni in plenty of boiling water for 15 minutes until really soft. Drain, rinse with cold water and drain again.

  2. Mix with the custard and rum. Slice the bananas and toss in the lemon juice to prevent browning.

  3. Spoon into 4 sundae glasses. Top with the custard mixture. Spread the whipped cream over.

  4. Chill, if time, and top with the ginger-nuts just before serving.
