Recipes - Scandinavian Apple Rice
Ingredients

100 g/4 oz/1/2

brown rice

750 g/1 1/2
lb
cooking (tart) apples, sliced

45 ml/3 tbsp water
-
75 g/3 oz/1/3 cup
butter
-
75 g/3 oz/1/3 cup light
brown sugar
-
2.5 ml/1/2 tsp ground cinnamon
-
50 g/2 oz/1
cup cake crumbs
-
150 ml/2/3 cup
double (heavy) cream
-
45 ml/3 tbsp
redcurrant jelly (clear conserve)
Method:
-
Cook the rice
according to the packet directions. Drain.

Meanwhile, put the apples in a pan with the water
and stew gently until pulpy. Beat in half the butter
and sugar.

Mix the remaining butter and sugar into
the rice with the cinnamon and cook over a gentle
heat until absorbed.

Layer the apple and rice
mixture in a glass serving dish. Top with a layer of
cake crumbs and leave to cool.

Whip the cream and
spread over. Melt the redcurrant jelly and drizzle
attractively all over the top. Chill until ready to
serve.
