Dessert Recipes - Strawberry Ratafia Sundae

Ingredients

  • 350 g/12 oz/3 cups strawberries

  • 100 g/4 oz/1 cup ratafias, crushed

  • 230 g/1 large can creamed rice

  • Grated rind and juice of 1 orange

  • 25 g/1 oz/2 tbsp caster (superfine) sugar

  • 150 ml/2/3 cup double (heavy) cream


Method:

  1. Reserve 4 of the strawberries for decoration and hull and slice the rest.

  2. Mix with the ratafias, rice and the orange rind. Turn into 4 large sundae dishes.

  3. Whisk the orange juice, sugar and cream until thick. Spoon on top and decorate each with a strawberry.
