Dessert Recipes - Toffee Cocktail Rice

Ingredients

  • 430g/15 1/2 oz/1 large can creamed rice pudding

  • 430g/15 1/2 oz/1 large can fruit cocktail, drained, reserving the juice

  • 60 ml/4 tbsp light brown sugar

  • 10 ml/2 tsp arrowroot

  • 10 ml/2 tsp lemon juice


Method:

  1. Mix the rice and fruit in a saucepan and heat through, then turn into 4 individual flameproof dishes.

  2. Or place directly in microwave-safe flameproof dishes and heat in the microwave, stirring occasionally.

  3. Sprinkle the tops liberally with the sugar to cover completely. Place under a hot grill (broiler) until bubbling and melted.

  4. Blend the arrowroot with the lemon juice in a saucepan. Stir in the reserved juice and bring to the boil, stirring until thickened.

  5. Pour into a jug and serve with the toffee rice.
