Recipes - Toffee Cocktail Rice
Ingredients

430g/15 1/2 oz/1 large
can creamed rice pudding
-
430g/15 1/2
oz/1 large can fruit cocktail, drained,
reserving the juice

60 ml/4 tbsp light
brown sugar

10 ml/2 tsp arrowroot
-
10 ml/2 tsp lemon
juice
Method:

Mix the rice and fruit in a saucepan and heat through, then turn into 4
individual flameproof dishes.

Or place directly in
microwave-safe flameproof dishes and heat in the
microwave, stirring occasionally.

Sprinkle the tops
liberally with the sugar to cover completely. Place
under a hot grill (broiler) until bubbling and
melted.

Blend the arrowroot with the lemon juice in
a saucepan. Stir in the reserved juice and bring to
the boil, stirring until thickened.

Pour into a jug
and serve with the toffee rice.
