Dessert Recipes - Tutti Frutti Rice

Ingredients

  • 50 g/2 oz/1/4 cup butter

  • 100 g/4 oz/1/2 cup short-grain (pudding) rice

  • Grated rind of 1 lemon

  • 50 g/2 oz/1/6 cup golden (light corn) syrup

  • 300 ml/1 1/4 cups milk

  • 300 ml/1 1/4 cups single (light) cream

  • 1 egg

  • 25 g/1 oz/1/6 cup sultanas (golden raisins)

  • 25 g/1 oz/2 tbsp mixed (candied) peel

  • 25 g/1 oz/2 tbsp chopped glace (candied) cherries

  • 25 g/1 oz/2 tbsp chopped angelica

  • Freshly grated nutmeg


Method:

  1. Liberally grease a 1.2 liter/2 pt/5 cup oven­proof dish with half the butter.

  2. Put the rice in the dish with the lemon rind. Spoon over the syrup.

  3. Whisk the milk, cream and egg together and strain over. Stir in the fruits, peel and angelica and grate some nutmeg over.

  4. Dot with the remaining butter and bake in the oven at 160°C/325°F/gas mark 3 for 2 hours.
