Dessert Recipes - Vanilla Fluff

Ingredients

  • 30 ml/2 tbsp ground rice

  • A pinch of salt

  • 600 ml/2 1/2 cups milk

  • 2 eggs, separated

  • 30 ml/2 tbsp caster (superfine) sugar

  • 15 g/1 tbsp butter

  • 5 ml/1 tsp vanilla essence (extract)

  • Whipped cream (optional)


Method:

  1. Put the rice with the salt and milk in a saucepan. Whisk in the egg yolks.

  2. Bring to the boil and cook for 5 minutes or until thickened and smooth.

  3. Stir in the sugar, butter and vanilla essence. Cool slightly. Whisk the egg whites until stiff and fold in with a metal spoon.

  4. Turn into 4 individual dishes and chill until set. Decorate with whipped cream, if liked, before serving.
